Off the top of my head; Seth Rollins, Edge, CM Punk Chris Jericho, and Jimmy Jacobs. I think Jimmy had the best character evolution ever. From furry boots-wearing "Huss!" to love-obsessed emo to insane, sociopathic cult leader.

Jimmy Jacobs and Sami callihan. Callihan is the example of a person who will doing anything for wrestling. Went from like 300+ pounds to like 210 ish in under a year. One of the best wrestlers going today.
